Wir dürfen euch hier im nunmehr zweiten Jahr wieder einen wunderbaren sortenreinen Specialty Canephora aus Ecuador präsentieren. Wieso ? Weil er wirklich gut ist ! Die Kölnerin mit ecuadorianischen Wurzeln Giomar Hidalgo - kurz Gio - hat sich zum Ziel gesetzt einerseits Frauen in ihrer Heimat zu unterstützen und andererseits Canephora in Specialty Qualität zu importieren.
Dafür verbringt sie viel Zeit in ihrem Heimatland und arbeitet eng mit einigen wenigen Frauenkooperativen zusammen, um Jahr für Jahr bessere Canephoras zu produzieren und nach Deutschland zu importieren. Wir unterstützen dieses Bestreben vollumfänglich und freuen uns über einen spannenden Kaffee der beweist, dass sich Canephora geschmacklich nicht vor Arabica verstecken muss.

Rezeptvorschlag, Methode: V60
- 17g Kaffee
- 94-95°C Wassertemperatur
- 255 ml Wasser
- 2:30 - 2:45 Minuten Extraktionszeit
- 40ml zum Blooming aufgießen und 30 Sekunden warten (kurzer Swirl)
- bis 150ml aufgießen und noch mal 30 Sekunden warten
- bis 255ml aufgießen und durchlaufen lassen
- fertig
